Our EVOO: The heart of Finca La Pontezuela

Finca La Pontezuela’s EVOO is a natural olive juice, obtained directly from olives from our own olive groves using mechanical processes and cold extraction (always below 24º) and on the same day of their harvest. This guarantees the preservation of the organoleptic properties and the exceptional quality of our Extra Virgin Olive Oil.

Finca La Pontezuela carefully and meticulously cultivates the Arbequina, Cornicabra, Hojiblanca, Picual, and Redondilla varieties. With these, we produce our Extra Virgin Olive Oil with a wide range of aromatic and gustatory profiles.

Cornicabra: These EVOOs typically have a medium fruitiness, balanced bitterness and pungency, with notes of olive leaf and green apple. Ideal for stews, roasts, and toast.

Picual: Characterized by its intensity, pronounced bitterness and pungency, with hints of green grass, olive leaf, and tomato plant. Perfect for salads, toasts, and enhancing flavors.

Hojiblanca: These EVOOs are usually balanced, with a medium-high fruitiness and a slight bitterness and pungency. They feature notes of green apple, fresh grass, and occasionally, a hint of almond. They are very versatile, ideal for dressing vegetables, grilled fish, salads, and gazpachos.

Redondilla: This lesser-known variety is characterized by its high intensity green fruitiness. On the palate, it offers a harmonious balance between medium intensity bitterness and pungency. Its aromatic notes evoke freshly cut grass, with herbaceous and almond nuances. It is ideal for salads, cold soups, and pairing with meats and fish.

Arbequina: Characterized by its smoothness and sweetness, with a very intense and delicate fruitiness. Its bitterness and pungency are almost non-existent or very slight. Envero is the moment when the olive changes color, transitioning from intense green to purple and, finally, to black. At Finca La Pontezuela, olives are harvested at this optimal point of ripeness (early harvest), when the olives are still green or just starting to change. This is crucial because, at this phase, the olive offers the maximum expression of its sensory attributes and its highest concentration of polyphenols, guaranteeing an EVOO with balanced fruitiness, bitterness, and pungency, and a higher quantity of antioxidants.

Cold extraction is a method of olive oil production in which the temperature of the olive paste does not exceed 27º throughout the entire process. This temperature control is crucial because it prevents the volatile compounds, which are responsible for the oil’s intense aromas and flavors, from evaporating.

This care in the process, along with the speed with which the olives are milled after harvest (less than 3 hours), allows them to obtain oils with an exceptional organoleptic profile, rich in flavor, aroma, and with all their healthy properties intact.
