Our EVOO: The heart of Finca La Pontezuela
Finca La Pontezuela carefully and meticulously cultivates the Arbequina, Cornicabra, Hojiblanca, Picual, and Redondilla varieties. With these, we produce our Extra Virgin Olive Oil with a wide range of aromatic and gustatory profiles.
Cornicabra: These EVOOs typically have a medium fruitiness, balanced bitterness and pungency, with notes of olive leaf and green apple. Ideal for stews, roasts, and toast.
Picual: Characterized by its intensity, pronounced bitterness and pungency, with hints of green grass, olive leaf, and tomato plant. Perfect for salads, toasts, and enhancing flavors.
Hojiblanca: These EVOOs are usually balanced, with a medium-high fruitiness and a slight bitterness and pungency. They feature notes of green apple, fresh grass, and occasionally, a hint of almond. They are very versatile, ideal for dressing vegetables, grilled fish, salads, and gazpachos.
Redondilla: This lesser-known variety is characterized by its high intensity green fruitiness. On the palate, it offers a harmonious balance between medium intensity bitterness and pungency. Its aromatic notes evoke freshly cut grass, with herbaceous and almond nuances. It is ideal for salads, cold soups, and pairing with meats and fish.
Arbequina: Characterized by its smoothness and sweetness, with a very intense and delicate fruitiness. Its bitterness and pungency are almost non-existent or very slight. It stands out for its aromas of ripe fruits such as apple, banana, and almond. It is perfect for cold dishes, desserts, delicate salads, and for those who prefer mild flavors in their oil.
We produce and commercialize the highest quality EVOO under our main brands Finca La Pontezuela and 5 Elementos, each with different varieties and editions, including the prestigious 5 Elementos Gran Selección and limited editions such as 5 Elementos Singulare.
The production process at Finca La Pontezuela is meticulous and takes place in our own oil mill. It begins with the early harvest of the olives, followed by their immediate transport to the mill. There, they are ground on the same day of collection, extracting the juice in cold and solely by mechanical procedures, which ensures that the EVOO preserves all its organoleptic and nutritional properties.
Envero is the moment when the olive changes color, transitioning from intense green to purple and, finally, to black. At Finca La Pontezuela, olives are harvested at this optimal point of ripeness (early harvest), when the olives are still green or just starting to change. This is crucial because, at this phase, the olive offers the maximum expression of its sensory attributes and its highest concentration of polyphenols, guaranteeing an EVOO with balanced fruitiness, bitterness, and pungency, and a higher quantity of antioxidants.
This care in the process, along with the speed with which the olives are milled after harvest (less than 3 hours), allows them to obtain oils with an exceptional organoleptic profile, rich in flavor, aroma, and with all their healthy properties intact.
Finca La Pontezuela is a benchmark in cultivation techniques and for the respect of its centenary olive groves. We use pruning and harvesting techniques that ensure an extraordinarily high-quality production, guaranteeing sustainability.

This involves constant and meticulous supervision of the olive grove and the use of environmentally friendly methods, prioritizing prevention and the use of biological or low-impact treatments to protect the health of the olive tree and the purity of the oil.
