This very rare variety, with a small production, has existed in the Montes de Toledo area since ancient times. Due to its earlier ripening times compared to that of Cornicabra, Redondilla was used to improve the pollination of the primary regional variety. Many Redondilla olives were left to fall to the ground and were never used for consumption.

These trees were also used traditionally to lure birds so they would feast on the more ripe Redondilla fruits instead of the less ripe, Cornicabra olives (greener). For these reasons the tree was only given an agricultural value, not a commercial one.

The Redondilla olive is small and round as its name indicates. Thousand-year old Redondilla olive trees grow on the La Pontezuela estate.

Harvest date: October / November, early harvest.

Irrigation: Rain-fed.

Collection system: Tree shakers are used to help fruits to detach directly from the tree without touching the ground. Hitting the tree with poles is avoided which helps to maintain our trees healthy.

Harvesting temperature: Harvesting during high temperatures is avoided. The workday is shortened according to very hot periods (> 35°C/ 95ºF).

Time between harvest and milling: Less than 3 hours.

Production system: Continuous two-phase system, cold extraction (below 27°C/ 80ºF), contact with water is minimized.

Filtration: Continuous filtration after the extraction process to remove moisture and impurities that may remain in our olive juice and can shorten shelf life.

Storage: Stainless steel tanks preserved with nitrogen.

Colour: Green with hints of gold.

This medium-high intensity EVOO has fruity notes of green olive and aromas and nuances reminiscent of freshly cut grass. The oil shows freshness through its prominent attributes of green leaf and green stem. It is a harmonious oil with a well balanced, marked bitterness and pungency.

Redondilla Extra Virgin Olive Oil has an oxidative stability similar to the more common varieties, Cornicabra and Picual. Its high levels of polyphenols (natural antioxidants), fruitiness and aromas, makes it a unique oil with noteworthy characteristics.

The main attributes of fruity, bitterness and pungency are proof of its polyphenol content. Oleuropein is the most prevalent in this variety, evident in its bitterness. We have crafted a harmonious olive oil by choosing the perfect moment to harvest and by carrying out milling process with extreme care. The polyphenol, pigment, sterol and Vitamin (A and E) content provides exceptional nutritional value that help to prevent degenerative diseases related to cell oxidation, coronary heart disease and even breast cancer.

To pair Extra Virgin Olive Oil one must have a minimum knowledge of the attributes each variety has and how they interact with each food or recipe. A consumer may have an EVOO variety preference. The Redondilla Extra Virgin Olive Oil has a medium-high intensity and therefore should be used with foods with a similar intensity. This will help to complement the food rather than overpower the plate.
